Mai Tai
No pineapple juice. The real one is rum, lime, orange and almond.
Ingredients
- 30 ml White rum
- 30 ml Dark rum
- 15 ml Triple sec
- 15 ml Orgeat
- 25 ml Limes
Method
Shake with crushed ice and pour unstrained. Float the dark rum if you like drama.

- Triple sec → Cointreau or dry curaçao — the same category — Cointreau is the benchmark and worth the difference
Where it comes from
Victor Bergeron — Trader Vic — mixed it in Oakland in 1944 for Tahitian friends, one of whom reportedly said "maita’i roa ae", roughly "out of this world". The pineapple-juice version served at most resorts is not his recipe.
