Dark rum

What it is

Rum aged in barrel, sometimes coloured with molasses. Richer and heavier, with dried fruit and treacle notes.

Typically about £20 a bottle in the UK.

What it tastes like

Molasses, dried fruit, toffee and oak, sometimes with a bitter burnt-sugar edge. Much heavier on the palate than white rum.

What it does in a drink

Base or float. In tropical drinks it supplies the depth that white rum cannot, and is often floated on top for aroma.
