What it is
White wine fortified and aromatised, finished dry. It is wine: refrigerate after opening and replace it every few weeks.
Typically about £9 a bottle in the UK.
What it tastes like
Green apple, chamomile and dried herbs over a dry, slightly saline wine base. It should taste fresh — if it tastes of sherry, the bottle has gone.
What it does in a drink
Modifier. It dilutes and softens a base spirit while adding wine acidity and herbs — the reason a Martini is not just cold gin.
