Maraschino
Liqueurs & bitters · usually a modifier · in 2 cocktails here
What it is
Made from Marasca cherries including the stones, which gives it a dry, nutty character. It is nothing like the syrup in a jar of cocktail cherries.
Typically about £22 a bottle in the UK.
What it tastes like
Dry rather than sweet, with sour cherry, almond and a distinct nuttiness from distilling the stones. Funky and divisive.
What it does in a drink
Modifier used in small measures. It sweetens while adding a dry, nutty complexity that sugar cannot.
