What it is
Italian sparkling wine from the Glera grape, made in tank rather than bottle. Brut is dry enough for mixing.
Typically about £9 a bottle in the UK.
What it tastes like
Green apple, pear and white flowers, with a soft bead. Brut styles are dry enough not to sweeten a drink.
What it does in a drink
Lengthener. It adds volume, acidity and lift without the dilution that soda brings.
