What it is
Unaged or lightly aged cane spirit, filtered clear. Light and dry, which is why it disappears cleanly into citrus.
Typically about £16 a bottle in the UK.
What it tastes like
Light sugarcane sweetness, a little vanilla and coconut, and a faint grassy edge. Dry enough to disappear behind citrus.
What it does in a drink
Base spirit for sours and highballs, light enough that lime and sugar stay in front.

Best known
- Cuba Libre IBA Rum and coke plus lime, which is the entire difference.
- Daiquiri IBA Rum, lime, sugar. Nothing else, and nothing missing.
- Piña Colada IBA Blend it or shake it — just do not skimp on the coconut.
- Mai Tai IBA No pineapple juice. The real one is rum, lime, orange and almond.
- Mojito IBA Press the mint, do not shred it. Bruised mint tastes like a lawn.
- Long Island Iced Tea IBA Five spirits and no tea. Proceed with respect.
