Caipirinha
Muddle the lime with sugar in the glass. No shaker required.

Method
Quarter the lime, muddle with sugar, fill with crushed ice, add cachaça and churn.

If you're missing something
- Cachaça → White rum — cleaner and less grassy — strictly it stops being a Caipirinha, but it works
- Sugar syrup → Agave syrup — slightly sweeter, so use a little less
- Sugar syrup → Honey — loosen with warm water first; adds its own flavour
Where it comes from
Brazil’s national cocktail, made with cachaça — sugarcane spirit distilled from fresh juice rather than molasses, which is what separates it from rum.
